Perfect Sunday morning; perfect oatmeal pancake
As we heard the distant sound of music and cheers for our local marathon, my husband and I tucked in to a scrumptious breakfast of oatmeal blueberry pancakes. These gorgeous pancakes are hearty but light, sweet but tangy and their golden color puts many a pale pancake to shame. Credit must be given to the source of their deliciousness which is Bob’s Red Mill Baking Cookbook. I ordered this book last year, and have been very happy with many of the recipes. For the pancakes in question we have slightly modified Bob’s recipe by substituting oat flour for the oatmeal, increasing the buttermilk and adding a little bit of vanilla.
As the first marathoners hit the finish line, we savored our last bites of the perfect pancake and began to savor our Sunday even more.
